I say, just serve them raw, with dip. Kids love dip, with anything, and everything. Also, serve them Frozen Peas, they love them frozen (remember there tummy is only as big as their fist, so serving portions need to be considered). Grate carrot into meatloaf, you can make soup (blend it), with little fishy crackers, and cheezy sprinkles. . . . they love that. Lets go fishing. How many fishies can you eat.

i chop them REAL fine, even throw them in a food processor, so they are tiny, then throw the vege mix in anything ur cooking like pasta sauce ((spaghetti, lasagne carbonara anything)) or in hambuger meat to make a vege burger thingy, and they will eventually all but dissolve in the cooking process..... or get them to make their own pizzas outta Tortilla wraps, failing that, get them to hep wash the veges ad put the chopped ones in the pot , if they are involved in the cooking process they MIGHT be more inclined to eat them...
Just a few ideas that have worked for me as the other of a picky boy
hope they helped some

raw with dip is best, and offer a variety. also lead by example. if they do not see you eating veggies, the will not want to do it themselves. i told my daughter why we need the vegetables i.e. 'carrots help your eyes to see. it wouldnt be nice if we couldnt see'... and she we say 'can i have my seeing carrots now'. there were a few i couldnt get past her like cauliflower. that i pureed and put in mac& cheese or something else with a creamy base and she never noticed. the only thing were still having troubles with is peppers.
